Traditional Easter Simnel Cake

This is a traditional style Easter Simnel Cake, lightly spiced, with lots of fruit, cherries, and peel, it has Marzipan baked in the centre, and is finished with a bright ribbon, Marzipan top and the traditional 11 Marzipan balls to represent the eleven apostles minus Judas.

Light, moist and crumbly, and not too sweet, this Simnel Cake, although containing lots of fruit, is not as dense and heavy as a traditional Christmas Cake.

This is an eight-inch cake, so you should get a good 10 to 12 slices.

Ingredients; Dried Mixed Fruit, Peel and Glace Cherries in varying quantities (sulphur dioxide) Marzipan (Nuts) Wheat Flour (contains Gluten), Raising Agents: Sodium Phosphates, Diphosphates. Vegetable Oils (Rapeseed, Palm, Sunflower), Water, Salt (1.5%), Buttermilk (Milk), Preservative (Potassium Sorbate), Emulsifier (Mono and Diglycerides of Fatty Acids), Acid (Citric Acid), Flavourings, Vitamin A and D, Colour (Carotene) Sugar. Whole Free Range Eggs (Egg). Orange Zest. Mixed Spice.
