Cadbury Mini Eggs Easter Cookie Cake

Cadbury's Mini Eggs baked into soft, chewy cookies in cake form, what more could a soul possibly need? This Easter Cookie Cake really is made of cookie, just the way cookies should be, slightly crisp on the outside and soft and chewy inside, with loads of Cadbury's Mini Eggs actually baked into the cookie. Pure Heaven!

The cake consists or two fat eight inch cookies, sandwiched together with fluffy vanilla buttercream, then decorated with Mini Eggs nesting in little vanilla buttercream rosettes all the way round the outside. 

This cake will happily serve 16 slices.

Tip; To keep your cookies softer and fresher for longer, store them in an airtight container or bag with a slice of bread.
